Cooking a pig in the ground

Cooking a pig in the ground
I'm thinking of doing a pig in the ground for the club.
I can get a 100 pound pig, dressed and quartered for $85.00
We would hold the festivities at my house.
I'll buy the pig, but someone else will have to do all the work. (Dig the hole, prep the pig, etc.) Once the pig is in the ground, the coals will do the rest.
I have mesquite trees all around my place, so wood is not a problem, just need a chainsaw to cut it into manageable sizes.
People that don't help with the labor and cooking can bring side dishes.
I'm just testing the waters to see how many would participate. The pig would have to go from butcher to the pit, as I don't have a freezer to hold anything like that.
If you are remotely interested in doing a desert luau, post here.
We need:
cookers to prep and cook the pig.
laborers to cut the wood and dig the hole.
people to bring additional sides.

Chris. ironwood is your best bet for the coals, pig will have to go in the day before and cook over night. Let me know date , depending on my work schedule might be able to help.

No date yet, just seeing who's interested before I commit.

Re: Cooking a pig in the ground
I guess not alot of people like pork
maybe we can have a gathering/cook out at my place, once we get back from sedona.
I like to grill so......... , anything anyone likes i can grill, you name it; chicken, steak, ribs, fish, shrimp
I love it too!!! and maybe we can have some
or not it doesnt matter
I tend to kinda over cook things with a couple of beers in my system, Ill be engaged in the conversations and forget about the grill.
